Turkey Meatloaf

On 20th, 21st & 22nd May 2015, This was Dinner

This was the most amazing meatloaf I have ever tasted! I could have eaten this every day for a week! The smell when I walked through the door alone made me drool.

Preparing:

  • Finely chop an onion
  • Finely chop a garlic clove
  • Beat an egg
  • Prepare some fresh breadcrumbs
  • Heat the oven to 160ºc (fan)
  • Get turkey mince, Worcestershire sauce, barbecue sauce, tomato purée, oil & seasoning ready

Making:

Heat the oil in a pan and cook the onion until softened. Add the garlic, Worcestershire sauce and tomato purée and cook for another minute. Leave to cool.

In a bowl, mix the mince, breadcrumbs and egg with the onion mixture. Ensure it is mixed well then form into a loaf shape. Use a loaf tin to do this but don’t bake it in there.

Pop into a roasting tin, smother with barbecue sauce  then bake for about an hour.

My input today? Heating up a tin of beans 😉

On Thursday we just went with shop bought pie and chips.

On Friday we made a Jamie at Home Crispy and Sticky Chicken which was basically a tray bake of thighs, tomatoes and potato which for some reason I didn’t photograph.
