Spaghetti Carbonara

On 13th March 2015, This was Dinner

I just love a really simple carbonara don’t you? This has been my go to recipe for a long time. Bacon lardons or cubed pancetta? I just bought lardons as they were on offer.


  • Finely slice a couple of shallots
  • Finely chop a garlic clove
  • Grate some parmesan
  • Chop some parsley
  • Get spaghetti, bacon lardons, an egg, double cream oil & seasoning ready


Cook the spaghetti according to the instructions.

Heat a frying pan and cook the lardons until starting to crisp. Remove and set aside.

Heat a little oil in the pan and cook the garlic and shallot until softened.

In a bowl mix the egg, cream and most of the parmesan.

Add the lardons back to the shallots. Drain the pasta and add that too. Turn off the heat and add the cream mixture, stir well and the heat will allow it to cook through.

Season well and serve with a sprinkle of parmesan and some parsley.

    1. OH you really should. I would say it is well worth the effort but there is no effort involved whatsoever and it is so good! I have made it once with more egg but this is enough for me.
