I have to confess that today was my first day back at the gym since before Christmas and to be honest, I really enjoyed it.
This is a Jamie/Mary mash-up – Jamie Berry or Mary Oliver if you will. There is no way on earth now that our Yorky P’s are not made with 200g milk, 200g plain flour, four eggs and a pinch of salt, no way ever! I liked the idea of the onion sauce that I found in a recipe of Mary’s though so here we go:
- Prep your pudding mixture as above, leave to chill for a while
- Slice an onion
- Heat the oven to 190ºc (fan)
- Prepare some beef stock
- Get milk, plain flour, sausages, oil & seasoning ready
Put some oil in your chosen pudding pan, we used individual muffin trays for ours. Pop it in the oven to get to a high heat whilst you do all your other prep.
Brown off the sausages in a pan. Remove and if, like us, you are doing mini-toads, chop into bite sized pieces.
When the oil is heated, add a couple of pieces to each muffin section and pop back in the oven for a few minutes. Take out and quickly pour in the batter. Cook in the oven for about 18-22 minutes.
Heat some oil in the pan you browned the sausages in and fry the onions until just starting to brown and soften. Throw in some flour and stir for a couple of minutes to cook out. Take off the heat.
Mix the milk and stock together and add a little at a time to the onions, stirring all the time. When it’s all been added, season well and turn up the heat until it starts to boil then simmer to thicken.
* ETPA = estimated time of puppy arrival (although there is no estimate about it)
