Every single magazine or newspaper you pick up at the moment has a sprout and pancetta recipe as a side for Christmas day. A far cry away from the boiled mush in days of old. I fancied sprouts and needed a pasta dish so took this as inspiration.
- Boil the kettle
- Prepare and halve some sprouts
- Chop some shallots
- Finely chop a clove of garlic
- Grate some parmesan
- Get smoked bacon lardons, oil, seasoning & pasta ready
Pop the sprouts in boiling, salted water for 4 minutes, drain and refresh.
Cook the pasta.
Heat some oil in a pan and cook the shallots until softened. Add the garlic for the last minute, push to the side of the pan.
Cook the bacon lardons until starting to crisp up.
Add the sprouts to the pan and stir well.
Drain the pasta, reserving some of the water.
Add the pasta to the sprout mixture and then add the pasta water.
Sprinkle in the parmesan and stir well. Add a little more pasta water if required. Season well.
I was quite ill today so Mr S made it, it was just the pick me up I needed.
