This was supposed to be Sweet Potato and Brussel Sprout Hash but I have absolutely no clue what happened to them. I saw the lady on the stall measure them out. So if you were in Doncaster and found a bag of Brussel sprouts last week, I really hope you enjoyed them!
- peel & chop a couple of potatoes
- peel & chop a couple of sweet potatoes
- finely slice and roughly chop a savoy cabbage
- chop a red onion
- finely slice a red chilli
- finely chop a garlic clove
- get oil and seasoning ready
Cook the potatoes until just starting to go tender then drain.
Heat the oil in a pan and add the onion and garlic. When softened add the chilli and potatoes.
On a good heat let the potatoes cook, only turn them occasionally, you want the edges to start to caramelise.
Once you’re happy with your potato mixture, add the cabbage and some seasoning. Cook for a couple more minutes.
Move the potatoes around to make little ‘wells’ to cook the eggs in, add a splash of water and the eggs then pop the lid on until the eggs are cooked.
