Crispy Bacon & Sausage Carbonara

On 6th November, This was Dinner

This is a nice take on the carbonara, eggs, sausages and bacon? It’s almost breakfast pasta. For the first time ever we used gluten free pasta, not for any reason other than Mr S picked it up at the deli and decided to go with it but I was very impressed. I would never have know the difference.

Preparing:

  • squeeze the sausage meat out of the casings and roll into little balls
  • finely chop an onion
  • separate some eggs, keeping the yolks
  • grate some Parmesan
  • chop some parsley
  • get bacon, pasta, single cream & seasoning ready

Making:

Cook the pasta.

Cook the bacon in strips until nice and crispy.

Fry the balls of sausage until cooked through. Remove and keep warm.

Cook the onion until softened.

Mix the yolks, cream, most of the Parmesan and most of the parsley with some seasoning.

Drain the pasta, reserving some of the water then mix with the sausage balls and the cream mixture. Add some water if required.

Serve topped with the bacon and the remaining parsley and Parmesan.
