At one point I thought I was never going to get to eat this!
The good news was that my new sofa was delivered today, the bad news – someone else was having mine and, having had new windows and doors since it was delivered, we couldn’t get it out of the house! At one point I honestly thought that we would have to take a chainsaw to it!
Luckily, we bought our new one from the same place we bought the old one. You know, the one that always has a sale that ‘ends on Monday’ and the delivery man had said that, with some work, you could take it to pieces. We managed to do just that without destroying it so onwards it has gone to a good home! The new one looks wonderful but is taking some getting used to as the old one was some a huge comfy one to slob about on.
This is a pretty quick one and was a nice reward and a lot healthier than the takeaway I was tempted to order. It’s the first time I’ve used my new Bill Granger Easy (One of a few Mr S bought for my birthday).
- Peel some shallots
- Peel & roughly chop some ginger
- Peel & bash a couple of garlic cloves
- Roughly chop some coriander
- Pick some mint leaves
- Trim some pork chops
- Roughly chop a cucumber
- Slice a red chilli
- Get soy sauce, fish sauce, red wine vinegar, caster sugar, oil, lime, chilli sauce & seasoning ready
Put shallots, ginger, garlic, coriander, sugar, soy sauce, fish sauce, sugar and seasoning in a processor and blitz to make a paste.
Pop the pork in a bowl (non-metallic) and cover with the marinade, making sure to rub over all of the pork. Leave for at least 15 minutes, more if you can.
Make the dressing – mix the vinegar, fish sauce and sugar, stir well. Add the cucumber, spring onion and chilli.
Griddle the pork to your liking. Ours took about 4 minutes each side.
Serve with whatever you fancy, we used basmati rice.
Having been away for the weekend, we needed to shop so we just picked up a couple of pizzas for dinner on Tuesday night.
