Meatball Korma Curry

Well yesterday was understandably a complete write off after losing Jarvis. I’ve posted about him so I’m not going to go on about it but the idea of a) cooking or b) speaking to anyone was out of the question but my body told me I needed food so I ordered a kebab using Just Eat.

I tried to be a little more productive today, Mr S moved anything Jarvis related which in a sense was just as bad as seeing it! I had prepped these meatballs on Friday so it was just a case of making the sauce.

Preparation:

•  Prep the meatballs as per your liking

•  Finely chop an onion

•  Finely peel & chop some ginger (remember to peel the ginger with a teaspoon – loads easier)

•  Finely chop a garlic clove

•  Prepare some beef stock

•  Get some Korma curry paste, tin of chopped tomatoes, tin of evaporated milk, lemon, rice, frozen peas, vegetable oil and seasoning ready.

To make:

Brown the meatballs in a little oil and pop to one side.

Add more oil if required and add the onion, ginger and garlic to the pan. Cook until softened. Add some Korma paste, the tin of tomatoes and cook for another five minutes. Add the evaporated milk and a couple of squeezes of lemon juice. Season if required. Return the meatballs to the pan along with the frozen peas and cook through.

Serve with rice, naans & poppodums.
