Mr S made this whilst I jumped in the shower after the gym so I’m reading my quick phone notes I made for this.
• Cook some rice
• Whisk some eggs in a bowl with seasoning
• Chop some coriander
• Slice a chilli
• Finely chop a clove of garlic
• Fry some slices of Parma ham and roughly chop.
• Get some prawns, peas, oil & seasoning ready
Gently fry the chilli and garlic in a little oil.
Add the rice and some of the egg and stir fry.
Add the prawns and peas to heat though.
In another frying pan, pop the remaining egg in and cook as an omelette/pancake. Slice into ribbons.
Stir through the pancetta and some seasoning.
Serve topped with the egg ribbons, a little more coriander and (not shown here) lashings of chilli sauce.
