Finely slice cabbage, red onion and red chilli and mix with a dressing of sesame oil, brown sugar, soy sauce and lemon juice.
Butterfly a chicken and rub with sesame oil.
Crush some Sichuan peppercorns and cumin seeds and mix with chilli flakes. Sprinkle over both sides of the chicken.
Cook the chicken for two minutes each side then pop in a 190ºc (fan) preheated oven for about 6 minutes, ensure it’s cooked through.
Serve with rice.
