Another meal that doesn’t really need any explanation but I will.
Halve some cherry tomatoes and toss them in extra virgin rapeseed oil and red wine vinegar. Season well and leave for a while.
Toast some good thick slices of quality bread and toast. Rub with the cut side of a piece of garlic.
Pop the tomatoes on the toast and then add chunks of buffalo mozzarella, drizzle with a little more oil.
Enjoy the great taste and simplicity.
