I was looking through my old posts for inspiration and decided upon this one although I didn’t add any extra spice. A lovely and fresh pasta dish.
Pop oil and diced shallots along with a bit of black pepper into a frying pan, turn on the heat and cook gently until the shallot is softened.
Add sliced chorizo and turn up the heat a little, as it begins to release it’s oil and chopped fresh tomatoes and some salt. Cook for about 10 minutes, adding a little water if required.
Whilst this cooks, cook your pasta. When everything is ready, drain the pasta and add to the sauce along with some cooked prawns, stir through until the prawns are warm.
Serve with a scattering of parsley and finely sliced spring onion.
