Proper Baked Beans

It seems the food has been proper ‘bean heavy’ [insert own joke here], so much so that I have taken them off the menu for a few weeks. Not that they were not delicious, every single meal was, but I’m just a bit fed up of them.

These can be found in Tom Kerridge’s Proper Pub Food. I had every intention of making my own soda bread according to his book too but instead of making that at the weekend when I would have had the time, we had it midweek. Mr S got them ready for when I got in from the gym, otherwise it would have been a VERY late dinner. We also didn’t buy smoked streaky bacon in one piece.

Soak some dried beans overnight, I used borlotti. Drain the beans, cover with water and bring to the boil. Drain them again and cover with fresh water then return to the pan, boil, then turn down to a simmer for about an hour. The beans should be tender, you might need to add a little water. Drain and set aside.

Heat some oil in a pan and add pieces of smoked streaky bacon, cook until a little crispy. Add chopped onion and garlic and cook a little longer until softened. Add a tin of chopped tomatoes, some tomato purée, some sugar and some red wine vinegar. Give it all a good stir then add the beans and cook for another hour or so. Season well.

Serve with some crusty, buttered bread.
