Bacon & Squash Risotto

We finally got around to making the risotto and it was worth the wait.

Cook some chopped smoked bacon and remove from the pan, add chopped onion and soften a little then add peeled and chopped butternut squash to the pan and cook for about 10 minutes.

Stir in arborio rice and cook for a couple of minutes, coating the rice well.

Add hot vegetable stock a little at a time until all of the liquid is absorbed and the stock used up (about 150g of rice to 1 litre of stock).

Add the bacon about five minutes before the end.

Season and serve when the rice is tender.
