Another meal I didn’t have much input on, I do love cooking but it is nice to come home and dinner is already cooked.
Here’s what Mr S did, using the M&S App.
Heat some oil gently in a large pan and add a couple of bashed garlic cloves, along with some cumin seeds and a sliced red chilli.
The recipe calls for chilli con carne paste so he added a little water to one of those powdered packets. Add this and stir a little to cook out.
Add veg stock, tomato purée, cayenne pepper, a tin of drained and rinsed chickpeas and some sweet potatoes peeled and cut into small pieces. bring to the boil and then reduce the heat, pop the lid on and simmer for 15 minutes.
Add a tin of sweetcorn and cook for a couple more minutes the add the juice of half a lemon and season.
Serve with a dollop of sour cream and some toasted pittas.
