These satisfy my love of peas and are a nice change to the basic fish finger sandwich, which I also love.
Not that you really need a recipe for this as such but it can be found in the August edition of BBC Good Food.
Cook your fish fingers.
Boil some peas then add some oil and lemon juice and blitz with a hand blender. Season.
Warm up some tortillas and spread the purée over
Scatter with grated carrot and sliced cornichons. Give it a squeeze of lemon and wrap.
