This recipe was a slight adaptation of Hugh’s bacon, beans and tomato in his Three Good Things book.
Soak some dried beans overnight, I used borlotti. Cover with cold water and bring to the boil for 10 minutes. Skim off the scum on top then turn down low, cover, and simmer for about an hour. I did this meal the day before.
Heat some oil in a casserole dish and fry off some bacon lardons. add the beans, a bay leaf, some bashed garlic cloves, passata, apple juice, English mustard and some cider vinegar. Simmer, then cook for about 45 minutes. Season well.
I fried off slices of chorizo when I reheated the beans today. Mix through and serve with some good bread.
