A mixture of things – slightly hungover, hot weather, really, really hungry – this did not hit the spot.
Make your Yorkshire pudding mix and leave to rest in the fridge.
Brown the sausages (another reason they weren’t great – not market sausages) whilst a 12 hole muffin tin with goose fat heats up in a preheated 190ºc (fan) oven. Brown some sliced onion.
As you need the oil to be hot, drop chopped pieces of the sausage and the onion into the muffin tin and pop back in the oven for a few minutes. When ready, quickly pour the pudding batter into the tin and cook for about 25 minutes.
We didn’t fancy gravy so served it with home made chips and baked beans.
