A bit of a photography disaster – I managed to kind of save this photograph. Seems I’d got a bit cocky not checking my settings, I need to have a strong word with myself. Thank goodness for photoshop.
I slightly adapted this recipe from a Ken Hom one in the July Good Food mag.
Slice some chicken into thin pieces and add it to a mix of soy sauce, rice wine, orange juice, lemon juice and cornflour. Mix it well, cover and chill it for a while.
I didn’t have any normal rice so just cooked some sushi rice.
Cook the chicken in some hot oil, seasoning it well first. Add the marinade and let it bubble away.
A minute or so before it’s done, pop some pak choi on top, along with the lid and let it wilt.
Serve with the rice and a drizzle of the sauce.
