Smoked Mackerel Pate Platter

All that meat and eating out called for a nice healthy Monday dinner. I did manage to make a mistake with my shopping as this should have been served with a home made coleslaw but I forgot a cabbage and some fennel so we kind of made it up.

Make a quick pate with some smoked mackerel by mashing it with some natural yoghurt, lemon juice and seasoning.

Toss some red onion, carrot, apple and radish slices in a little white wine vinegar and serve with s few chopped walnuts.

I served it with a little celery, some oatcakes and some chopped tiger tomatoes that I’d bought for something else.
