Woah! So I’ve just had notification that I’ve completed 500 posts. I can’t believe I’ve been waffling on for so long. Pardon the pun.
Mr S decided we were shopping at Sainsburys (after the market and deli of course) this week and I was pleased we went. Morrisons is right on the doorstep and Sainsburys is across town, not great at midday, especially with roadworks but it was worth it. I picked up a bargain serving plate, a couple of tapas bowls and a new cook book called ‘Dirty Food’.
This recipe is from Hugh’s Three Good Things, hence the lack of a fancy title. The only way I changed it was to cook the pork a little differently.
Preheat the oven to 190ºc (fan). Pop a baking tray in with a decent bit of olive oil.
Peel and cube some potatoes and par boil in salted water. Drain them, pop them back in the pan, season with salt and pepper, put the lid on and give the pan a good shake.
Pop them on the oiled tray, turn them in the oil and roast for 20 minutes.
Core an apple and cut into wedges. Add the apple to the potatoes.
Sear a couple of pork chops on each side then pop them on top of the apples and potatoes along with a few sage leaves and cook until the potatoes are crisp and the pork is cooked through.
Serve it with kale, tossed in melted butter. Throw a little water in the pan and pop the lid on to steam for a minute or two. Season well.
