I had everything or at least a substitute for this meal. I’m not sure it would be classed as Asian but it’s close enough I suppose. It’s taken from Nigella’s Kitchen book.
Preheat the oven to 190ºc (fan).
Cook the sushi rice.
Sear the salmon on all sides then finish in the oven.
Grate a couple of cloves of garlic and a piece of ginger. Pop in a bowl and add a finely chopped red birds eye chilli, half a finely chopped green chilli, some fish sauce, dry sherry, mirin, lemon juice and a little water. Give it a good stir.
Serve drizzled over the salmon and rice.
