Sweetcorn & Broccoli Fritters

Continuing with National Vegetarian Week I made these delicious fritters which don’t appear to be on the BBC Good Food site yet for me to supply a link.

I’m using cheese again today, although only about 75g of cheddar. I think the quality of the Wooky Hole Cave Aged Cheddar may be the thing that made these so delicious.

Cook some broccoli in boiling water, remove and leave to cool.

Blitz some sweetcorn in a processor.

Pop in a bowl and add self-raising flour, chopped basil, grated cheddar, finely chopped spring onions, a beaten egg and some milk. Chop up the broccoli and add this too.

Give it all a good stir together.

Heat some oil in a pan and add some spoonfuls of the mixture. Cook for about two minutes on each side.

I couldn’t get any tzatiki so I just bought a garlic and onion dip and added some chives and chopped cucumber.
