Jerk Salmon & Mango Slaw

Doncaster market never lets me down. Whether it’s the fabulous fish, the marvellous meat, versatile veggies or the choicest cheese the quality is always great but I must give a shout-out to the quality of this salmon, it was amazing.

Not only is this post practically an advert for Doncaster Market, I’m also constantly advertising BBC Good Food recipes because this is one, yet again – the June copy.

I didn’t have jerk paste but as I had some jerk seasoning I adapted, here’s what I did:

Heat the oven to 190ºc (fan). Pop a baking tray in too.

Mix honey, lime juice, seasoning and white wine vinegar in a bowl. Finely slice (I used a mandolin) red cabbage, red pepper and mango. Add finely sliced spring onion and toss in the bowl.

Mix jerk seasoning, all purpose seasoning, olive oil and honey then spread all over the salmon.

Put the salmon on the heated tray and cook for about 15 minutes depending on it’s size.

Using HONEY, LIME, WHITE WINE VINEGAR, RED CABBAGE, RED PEPPER, MANGO, SPRING ONIONS, SALMON, JERK SEASONING and ALL PURPOSE SEASONING…
