Jacket Potato with Prawn Coleslaw

Many, many (many) moons ago I used to pick up a jacket potato with prawn coleslaw from one of those ovens street ovens. I still remember popping to out with Bev, my supervisor who looked a bit like Neighbours era Kylie, to quickly walk her dog then pick up a potato. I also remember trying to recreate it at home and watching Pretty Woman on video (Whooooo?) for the very first time. Yep! Showing my age. I didn’t quite get it right then but this was ‘pretty’ close.

We were going to have squid but I forgot to get it out of the freezer.

Bake the potato.

Mix shop bought coleslaw with a dollop of ketchup, a pinch of chilli flakes and a pinch of paprika.  Add cooked prawns – small ones.

Stick some butter in the potatoes and top with the coleslaw.
