Baked Peppers with Chorizo

So I had some really crappy news tonight.

Charlotte, who I work very closely with and also happens to be my cousin, called me to tell me she was handing in her notice.

Sad times and more work for me. We’ve worked together for 5 years so it will be rather strange.

Once I recovered from the news, I made this, a slight adaptation of a recipe in the latest BBC Good Food magazine.

Preheat the oven to 200ºc (fan).

Cut some peppers lengthways and stick them in baking dish, making them fit snugly.

Distribute quartered cherry tomatoes, chopped chorizo, cubes of ciabatta bread and cubes of manchego cheese between the peppers.

Drizzle with sherry vinegar and rapeseed oil. Season well.

Cover with foil and bake in the oven for 30 minutes.

Remove the foil and bake for another 15 minutes.

This was extremely tasty, don’t let the photograph of the chorizo put you off, it was definitely frazzled and not the charcoal it looks like here.

Using RED PEPPERS, CIABATTA, CHERRY TOMATOES, CHORIZO, MANCHEGO CHEESE and SHERRY VIENGAR…
