I’ve had a bag of frozen fish fillets in the freezer for a while now. So after peering in the fridge and finding a couple of stray spring onions and half a tub of crème fraîche I decided to make these.
I baked the jacket potatoes and cooked the fish then scooped out the potato and mashed it together with the flaked fish, chopped spring onion, chopped dill, a good dollop of crème fraîche and plenty of seasoning.
Pop the mixture back in the skins and top with plenty of grated extra mature cheddar, which is a staple in our fridge, then finish off in the oven for another ten minutes or until the cheese is bubbling.
Delicious and cheap.
