Cheese & Spinach Pasta with Walnut Crumble

I wasn’t quite sure what to do with myself tonight. After staring in despair at the pieces of crappy wood that have replaced what was a perfectly good wall on our border there was no dragons or hobbits or murderous Lannisters to turn to so I went with Jonny Lee Miller’s Sherlock guise instead.

I made this. I’m so much into my pasta at the minute.

Heat the oven to 170ΒΊc (fan)

Boil some pasta and sliced leeks.

In a pan, mix equal amounts of butter and flour to make a paste. Take off the heat. Add milk a little at a time, stirring continuously, add dijon mustard, a pinch of nutmeg and some seasoning. Let it thicken.

Stir in some grated cheddar.

Cook some spinach – I used frozen, then squeeze and chop.

Drain the pasta and leeks and mix with the sauce, spinach and some more seasoning. Sprinkle with diced french bread, chopped walnuts and more cheese.

Bake in the oven for around 20-25 minutes.
