It’s from the latest copy of BBC Good Food. I wanted fresh broad beans but couldn’t get any so I just boiled some frozen ones and Mr S painstakingly took the skins off, I probably wouldn’t have but it was worth it.
Cook the frozen broad beans then skin them.
Cook your chosen pasta.
Mix egg yolk, double cream, seasoning and Parmesan in a bowl.
Fry chopped bacon until crisp.
Throw the beans in with the bacon.
Drain the pasta and mix everything together, the heat of everything will cook the egg so don’t worry.
To serve, scatter with more Parmesan and black pepper.
