Scandi Sausage Hash with Beetroot

The recipe for this can be found here. Here’s how I did mine.

Boil some sausages in a pan for about 5 minutes. Remove from the pan.

Boil some diced potato until almost ready. Drain well.

Fry chopped onion and pieces of apple in a little oil until softened. Slice the sausages and add them and the potato to the pan. Season well.

Turn the heat up, don’t move everything around the pan too much as you want the potato to crisp up a little, turn occasionally, breaking down the potato a little.

Mix grated beetroot, honey, a little mustard, some white wine vinegar and a little water if required.

Serve with a fried egg and rocket.
