I’m surprised that this one has not appeared on the blog before. It’s from one of my very first cookbooks so it’s something we have eaten regularly in the past. There are even notes written in the book which I would never do now, I’d just wing it.
Cook an onion until softened and a little bit golden.
Add a bashed garlic clove then add pork mince and cook until browned, breaking down the lumps.
Stir in hot chilli powder then add chopped red pepper. Cook for a few minutes.
Add dark soy sauce and chicken stock and bring to the boil. Simmer whilst you cook some rice.
Add a little cornflour mixed into a little water to thicken it slightly along with some seasoning.
If you can, add some basil, I didn’t have any.
