This was the perfect antidote to a week of rich food and cheats food. The recipe can be found in Jamie’s Italy.
Cook some pasta.
In a pan, gently fry some chopped garlic and chilli in a little oil.
Add some cooked prawns along with a glass of white wine. Let the wine reduce a little and add tomato purée.
Drain the pasta, saving some of the pasta water.
Toss everything together adding lemon juice and rocket. Loosen with the pasta water.
Serve sprinkled with lemon zest, more rocket and a grating of parmesan.
