It was lovely to have my sister for dinner today and I think she was very happy with the turkey pie, she was definitely happy with the bottle of red she quaffed, as was I with my bottle of white!
Roast a piece of turkey in a 190ºc (fan) oven until just cooked through. This can be done beforehand.
In a pan, cooked finely sliced leeks, chopped and sliced mushrooms and finely chopped garlic until soft.
Chop the cooked turkey into bite-sized pieces and add to the pan. Sprinkle with flour and cook for about a minute, stirring well.
Add a glass of wine, not too much, you don’t want it to cut into your drinking of it! Let it reduce. Add some stock and a little double cream.
Stir through some chopped parsley and some seasoning then pop it all into a pie dish.
You can make pastry if you want but I bought mine, if it’s good enough for (some) TV chefs it’s good enough for me.
Add a pastry lid, cut a couple of slits in it, cover with egg wash and bake for about 30-35 minutes.
I served it with some frozen mixed veg.
There’s also photographic evidence of Emma eating leftovers as she waited for her taxi so I think it’s safe to say she enjoyed it.
