Mushroom, Polenta & Cheese

By it’s exciting title I think you may be able to guess that I’m back at Hugh’s 3 Good Things again.

I wanted a really good cheddar for this so bought it from the new Cheese Man at Doncaster market. It was almost Parmesan like and for the life of me I can’t remember what it was called.

Hugh uses the instant polenta but I had a block of ready made in the pantry so used that instead.

Add oil and butter to a hot pan. When the butter foams add roughly sliced mushrooms & chopped thyme leaves along with a bashed garlic clove. Stir often.

When cooked, season and add lemon juice.

Cook the sliced polenta (at the same time if you can) in a little butter on either side.

Serve the mushrooms on the polenta with a good shaving of your chosen cheese and a little more seasoning.

Using READY MADE POLENTA, MUSHROOMS, GARLIC, THYME, BUTTER, LEMON, EXTRA MATURE CHEDDAR…

  1. Sounds great, and mushrooms are the one thing I love but here in Ireland we are limited to what is available though I remember going into fields, (as a child) and picking mushrooms and then ..bliss. … tasting them later.

Any thoughts?
