Courgette, Mozzarella & Pasta

I really can’t stress how good Hugh Fearnley-Whittingstall’s 3 Good Things book is. Apart from a bad lamb dish which was down to the cut I used rather than the recipe, the meals have been both simple and delicious.

Butter an oven proof baking dish and preheat the oven to 190°c.

Slice a couple of courgettes and throw into a heated pan containing a little oil. Before they brown, turn down the heat and add some salt. Cook gently and stir often until tender. You want to get them quite mushy.

When they are nearly done, add finely chopped garlic.

Cook some pasta and a couple of minutes before it’s done, drain it and add the courgette mixture.

Tear up a good quality mozzarella and add it to the pasta along with some double cream. Season and stir well then add to the baking dish.

Sprinkle on a good grating of Parmesan and cook in the oven for about 20 minutes.
