Cider Pot-Roasted Pork Belly with Apples & Celery

So I clearly did some cooking today but I cannot remember eating this at all. Looks like I would have really enjoyed it though.

Season some boneless and rindless pork belly well. Heat the oven to 160ºc.

Fry chopped pork belly in an ovenproof casserole dish, remove from the pan then brown the pork belly on both sides. Remove from the pan.

Add back the chorizo along with some chopped celery, a large onion, a large, Bramley apple, a finely chopped garlic clove and some sage leaves. Pop the pork back on top then cover with a glass of cider and some chicken stock.

Pop the lid on and cook in the oven for about and hour to an hour and half.

Set the pork aside to rest then gently mash the remainder in the pan and thicken slightly on the hob.

We served it with a gorgeous creamy mash.
