I know I’m spoiled a little bit, Mr S did the supermarket shop on Friday, so this is definitely not a complaint that he didn’t buy pitted olives. It’s just an ‘observation’. It wasn’t fun trying to pit them, and apparently, cutting them in half is not the way to go about it – a day too late I’ve researched it. Now I know how to pit an olive without an olive pitter or an olive pitting machine. Really? You can buy a machine for that?
I’m definitely NOT complaining, he did most of the work on this one too. I just pitted the olives and washed up. (Although the olives were the hardest job!) 😉
Heat some oil in a pan and fry sliced orange and yellow pepper along with a couple of bashed garlic cloves for a few minutes until it starts to brown.
Cook some pasta as normal. Preheat the oven to 190ºc (fan).
In an ovenproof dish add the peppers, pitted olives, pasta, a tin of chopped tomatoes and a good sprinkle of chilli flakes. Season well and stir. Add a couple of tins of tuna and fork it through.
Sprinkle on breadcrumbs and your cheese of choice. We went with a mix of Montgomery cheddar, Claxstone aged red leicester and some parmesan. What a mix eh? There’s a new cheese stall in the market and I went mad. What a beautiful cheese ‘lid’ it made too.
Cook in the oven for about 15 minutes.
Definitely the best of the three week day meals we’ve had.
