Broccoli and Blue Cheese Soup

I saw a recipe for a broccoli and blue cheese soup in the Metro on my way to work one day last week and like an idiot I slung the newspaper in the bin before going home. I didn’t think I could get it wrong doing it like this:

Soften an onion in oil and a little butter.

Add a bashed garlic clove and a chopped birds eye chilli, stir for a minute.

Add some vegetable stock and broccoli florets, bring to the boil and simmer until the broccoli is tender.

Take it off the heat and add some blue cheese. I used Stilton. Blend with a hand blender until you have the consistency you prefer. Season it well.

I served it with croutons, extra blue cheese and a drizzle of double cream.
