Spiced Sausage Cassoulet

A one pot hearty and delicious meal with leftovers frozen for another day. I seem to be doing well at my money saving January so far.

This one is taken from the Save with Jamie book. Mine has some slight adjustments.

Pop the oven on at180ºc (fan).

I bought a big bit of pork belly to freeze for a another day and just cut a bit off the end for this meal. I think Jamie uses about 150g (skin off).

Chop the pork belly and some of your favourite sausages (cumberland in this instance) into a casserole pan with a little olive oil and brown.

Add sliced carrot, chopped onion and smoked paprika then cook for about 15 minutes.

Add some passata and a little water then add borlotti beans and season.

Stick it in the oven with the lid on for about 20 minutes.

Roughly chop some rosemary and toss in olive oil.

Remove the lid and sprinkle onto the cassoulet. Cook uncovered for another 30 minutes.

Serve on a warm ciabatta rubbed with garlic and tomato then sprinkled with salt.
