Roast Mushrooms with Pesto

If you can make your own pesto, please do. It makes such a difference although it’s shocking how much pine nuts cost!

So make your pesto by whizzing up basil,pine nuts, parmesan & garlic in a processor then slowly add extra virgin olive oil. Add a little seasoning.

Pop portobello/large mushrooms in a baking dish then top with the pesto.

Poor a little boiling water into the pan and cook for 15 minutes on about 190ºc (fan).

Serve on toasted ciabatta with a little salad & some seasoning.
