This was supposed to be a miso soup recipe but missing a trip to the deli meant a distinct lack of miso.
Improvisation from a visit to the fridge ended as this.
Cook a shallot, some oyster and shiitake mushrooms in a little oil. Add seasoning and crème fraîche at the end just to warm through.
Boil a couple of eggs (hopefully until the yolks are just starting to go hard)
Toast some nice bread and rub with the cut end of a piece of garlic.
Serve with some spinach.
