Herby Oven Baked Basa

The worst thing about missing the market is most definitely having to buy supermarket fish. The quality is far below what you can expect to pick up at the market. Luckily Aldi sell these packs of Basa which are really quite nice.

Preheat the oven to 180ºc (fan).

Toss slices of potato and lemon in olive oil and chopped rosemary. Season and layer in a roasting tin, bake for 10-15 minutes.

In a processor, whizz up garlic, parsley,basil, lemon zest and capers. Add oil and seasoning.

Place the fish on top of the potatoes and top with a lemon slice. Bake until the fish is cooked through.

Serve with a drizzle of the herby dressing.
