At some point over the last month I had taken some smoked haddock out of the freezer and then we had either decided to eat our or ordered a takeaway. Rather than let it go to waste, I poached it then froze it.
I cooked some baby potatoes in boiling water until almost ready then drained them, leaving them to steam for a couple of minutes.
In a frying pan, soften a shallot in oil.
Add a little olive oil and butter to the shallot and let it sizzle. Add the potatoes, leaving them to start to crisp on the bottom. Turn and leave a little longer.
Stir in the defrosted haddock and add a splash of stock.
Add shredded savoy cabbage and pop the lid on, leaving the cabbage to steam.
Give it all a good stir and serve with a mustard crème fraîche and a sprinkling of chopped parsley.
This more than made up for yesterdays rubbish!
