Fish & Chip Salad

This was magnificent. I’m drooling as I write the post. OK, it’s not anything special but it’s just wonderful in it’s simplicity. The original is from Nigel Slater’s Real Food.

I had bought the frozen, prepared squid in a supermarket offer before Christmas. The cod tails were on offer at the market so it fit with my budget too.

Cut the cod into strips and cut the squid into rings. Roll it all in fresh breadcrumbs.

I differed slightly here and just made my own chips (skin-on) tossed in oil and cooked in the oven.

Gently fry the fish in oil,do it in batches, don’t overfill the pan.

Season it well and serve it with salad leaves and this delicious dressing, whizzing up parsley, mint, anchovies, garlic, dijon, capers, extra virgin olive oil and lemon juice that Nigel describes as ‘a lumpy green sludge’ Yum! Lumpy green sludge.
