This is a really good take on a carbonara but when I say it’s from an Oliver book I suppose that’s a bit of a given. I’ve changed a couple of bits to suit. The original is in his 15 Minute Meals book.
Cook the pasta.
Chop the chorizo into matchsticks (just because that is Mr S’ new favourite way to) and fry it along with sliced red chilli & rosemary leaves, in a little olive oil with a couple of bashed garlic cloves and a pinch of pepper. Move it all around until it’s golden.
Whilst you cook your pasta of choice, beat an egg, lemon juice and natural yoghurt with grated parmesan.
Drain the pasta and mix with the chorizo then add the yoghurt mixture, stirring just off the heat to cook it through. Season.
I had some salad left in the fridge so I used them as I didn’t bother to make Jamie’s accompaniment.
Serve with added parmesan.
