Making & baking yesterday. I prepared this soup whilst I made the lasagne. The baking post is to follow.
From the Three Good Things book here’s another delicious soup but still behind the roast butternut squash one we had.
Sweat a chopped onion in oil and butter.
Add cubed celeriac, stir and cover for for ten minutes.
Add vegetable stock, bring to the boil then simmer for 15-20 minutes.
Add sliced sprouts and cook for another five.
Purée. At this point I popped it all to one side and let it cool, freezing half.
When ready to eat, add some milk, or cream if you want it a little richer, season and heat gently.
Fry some bacon (or in my case pancetta) until crisp and serve on top. I also made some croutons as we had some stale bread going spare.
