I’ve actually made this before here.
It’s a light and tasty flan from the Hairy
Bikers Dieters cookbook.
Pop a baking tray in a 180ºc (fan) oven.
Blanch some asparagus. Rinse under cold water and pop in a bowl.
Fry some onion and bacon (if you’re sticking to the low fat business you’ll use back bacon but I stuck some streaky in as I always have it in the freezer). Add it to the bowl and leave it all to cool.
Using four pieces of filo, pop them at right angles in your flan dish, oiling each one as you go. Crumple the over-hanging bits.
Make a paste with cornflour and a little milk. Add more milk and pop it on the heat, stirring until thick and smooth. Season it and add beaten eggs.
Pop the flan dish onto the hot baking tray. Add the bacon & asparagus mixture, pour over the milk mixture and scatter with cheese. Full fat cheese for me, I don’t see the point of anything else.
Bake for 25-30 minutes and leave to cool slightly. Delicious hot, extra delicious cold.
We took the rest to work for lunch.
