Jackets with Spicy Beans

These beans are one of our favourites. I do like a little chorizo added too but as I said previously, I’m trying to keep the costs down.

Cook the potatoes in the oven, these took about an hour and 20 minutes as they were huge.

Fry a shallot until softened.

Add rosemary and paprika, give it a stir.

Add your bean of choice, I used borlotti but normally use cannelini, chopped tomatoes, muscovado sugar, worcestershire sauce, marsala (in place of red wine) stock & some seasoning. Simmer until thickened.

Top your buttered potato with it and finish off with grated cheddar.
