Today was a non-event of a day so on with the dish…
It’s in the December edition of BBC Good Food. My new years resolution might be to stop buying these, there is so much inspiration around but I do love to flick through them.
Toss some chopped butternut squash & half a chopped onion in oil, stick them in a roasting dish & roast for about 20 minutes in a 190ºc(fan) oven.
Slice the other half of the onion & cook in a little butter & oil until soft & golden. Season.
Stir in some ground coriander & ground nutmeg & stir for 2 minutes. Add some tomato purée (sun-dried if you have it) & some basmati rice. Stir well.
Add some stock, bring to the boil then leave to simmer with the lid on for 10 minutes. (Do keep a check on it though). Turn the heat off, leaving the lid on.
Give the squash a stir & pop it back in the oven for another 20 minutes.
Stick the merguez in another tray & pop them in the oven too.
When everything is done, slice the sausages & mix everything together adding some seasoning, chopped pistachios & chopped fresh mint.
Serve with yoghurt & a sweet pepper & harissa sauce. I used yoghurt but blitzed together some store cupboard bits of roasted peppers, cherry tomatoes, ras el hanout, chilli flakes & sun-dried tomato paste and it was rather tasty.
This was a magnificent rice dish that I will definitely make again.
