After making the Cajun meatballs yesterday I may have indulged in a few G & T’s. Nothing wrong with that but my taste buds seem to have left me and I forgot to got anything ‘Sunday-ish’ out. This should most definitely be a mid-week meal.
Heat some oil and stir fry some chestnut mushrooms. Add roughly chopped hazelnuts & fry for a little longer. Season and take off the heat. Stir in roughly chopped sun-dried tomatoes, crushed garlic, breadcrumbs, chopped parsley & chilli flakes. Break in some chunks of feta and make sure it’s all well combined.
Cut the peppers in half and deseed. Fill with the stuffing and pop into a foil lined baking dish. If you can, pop a little foil on each pepper half, this was quite difficult for my as every time I opened the (fan) oven door it blew them off!
Bake in a preheated 190ºc (fan) oven for about 25 mins then remove the foil and cook for another 10 minutes.
I didn’t enjoy them! Sam Cooper, if you’re reading this, use tomatoes 😉
